Cast Iron Chocolate Chip Cookie

The best kitchen tool that belongs on the homestead is a trusty cast iron skillet. It is versatile and is a healthier option than using non-stick coated pots and pans – just do your research and make sure you are using a non-toxic cast iron product – I use Lodge brand.

Cast iron also gives off a rustic feel that I appreciate and love.

One of my favorite ways to use my cast iron skillet is by making this giant chocolate chip cookie. It is fast and simple to make – less than a half hour, start to finish. There is also no need for baking sheets!

This dessert is the perfect option for when you need to whip up a quick treat to satisfy that sweet tooth.

To begin, preheat your oven and melt the butter in a 10-inch cast iron skillet. You don’t want the butter to brown, so use a low heat.

Pour the butter into a bowl and add the sugars, egg, and vanilla.

Add the dry ingredients to the butter/sugar mixture. Stir until just combined, then add the dark chocolate chips.

I have been enjoying dark chocolate since I was little. Now, milk chocolate seems to taste funny to me as I am used to a richer and deeper flavor. If you are not a fan of dark chocolate, I encourage you to use dark chocolate chips in this recipe. It will add much more flavor and you may be surprised at the result.

Once the dough is mixed together, transfer it back into the skillet and spread it around with the back of a spatula. You want it to be an even layer that reaches to the edges on all sides.

Place the skillet in the preheated oven for 16 minutes to bake.

Once it comes out of the oven, feel free to enjoy right away! You will need to eat it with a plate and fork though. If you let it sit to cool for a bit, you should be able to cut it into slices and it will hold its shape.

Equipment

  • Cast iron pan

Ingredients

  • 1/2 cup butter
  • 1/4 cup sugar
  • 1/2 cup brown sugar packed
  • 1 egg
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup all purpose flour plus 2 Tbsp
  • 3/4 cup dark chocolate chips

Instructions

  • Preheat oven to 375°F.
  • Melt butter on LOW in a 10-inch cast iron skillet, then remove from heat. (You do not want the butter to brown).
  • Pour melted butter in a bowl. Mix in sugars, egg, and vanilla.
  • Add the dry ingredients to the butter/sugar mixture. Stir until just combined, then add the chocolate chips.
  • Transfer dough to the buttered skillet and place in the preheated oven for 16 minutes.

Notes

To be able to cut cookie slices out that hold their shape, wait for the cookie to cool down a bit first. (I know it's hard to wait - or you can eat it straight from the oven with a plate and fork).
